Homemade Chicken Soup

Homemade chicken soup really is the best. But isn’t everything homemade just a little better. And garden fresh homemade is, well, it’s amazing! Well I have my favorite Chicken Soup Recipe ready to share . I usually cook this in the Fall and Winter months but sometimes you just want a hearty bowl of soup during other times of the year so I’m sharing it now.

The more ingredients you can pull from your home garden the better the recipe. Many of the items can be grown in a small backyard garden or even in containers. So don’t let the idea of fresh ingredients intimidate you.

One of the best things about this recipe is it freezes well. So you can make it ahead and stick it in the freezer until you are ready. Instructions for that are after the instructions for making the soup.

Ingredients

  • 1 Whole Chicken
  • Handful of Parsley
  • 4-5 carrots peeled and cut into 3″ pieces
  • 1/2 bunch of celery cut into 3″ pieces
  • 1 Large yellow onion cut into quarters
  • 1 Can peeled tomatoes 14 oz.
  • 2 TBS Chicken Bouillon (MSG free if you can find it) I leave this out if I can’t find it MSG free
  • Salt and Pepper

Directions

Put cleaned chicken into large pot fill with water to about 2 or 3 inches above. Add carrots, celery, onion tomatoes, bouillon, and salt and pepper. Your stockpot should be almost 2-3″ from the top now. Bring all to a boil and then cook at medium to medium low until the chicken starts to fall apart. About 2-3 hours. Do not cover when cooking.

Cool and remove everything from the soup stock. Return carrots, cut smaller now. Pull apart check white and dark meat. Return meat to soup stock. You can do the same with the celery. You can strain the rest through a large mesh strainer by pressing it with a large spoon. This way you get even more vegetable flavor in the soup.

Freeze or Enjoy Right Away

Now you will have a nice amount of chicken soup stock. It is best to freeze in containers that are the amount you think you will want each time. I personally use glass containers. It is best to make sure the soup is cool before freezing in glass.

Then all you need to do when ready to eat is bring the soup stock to to a boil and add egg noodles or tortellini and parmesan cheese. Homemade chicken soup is the best.
