Low Fat Blueberry Banana Bread

Blueberry Banana Bread without the guilt. Sometimes you just don’t need all the fat and this blueberry banana bread is proof of it! This Blueberry Banana Bread is a mouth watering quick bread that doesn’t take a lot of time to make. You can have a fresh and delicious treat for you and your family ready in no time at all.

I came upon this recipe by mistake and loved it so much that it is how I prefer to make it now. The fresh ingredients make it a high fiber nutritious option too. Though it has added sugar it is no where near as much as other recipes call for. The sweetness in this recipe is from the blueberries and bananas which are high in fiber. Just another reason to love this simple nutritious recipe.

Ingredients

  • 1 3/4 cups all purpose flour
  • 2/3 cup organic sugar
  • 2 tsps baking powder
  • 1/2 tsps baking soda
  • 1/4 tsps salt
  • 2-3 ripe medium to large bananas
  • 2 eggs (Do you have access to local small farm raised eggs? If you do I highly recommend you use them or store bought)
  • 2 TBS Milk (I like organic almond milk)
  • 3/4 cup blueberries (fresh if possible, cleaned and drained)

Instructions

In a large bowl combine 1 cup flour, sugar, baking powder, baking soda and salt. Add mashed bananas and add milk. Use fork to blend well. Add eggs and remaining flour. Mix together and then add fresh blueberries.

Pour batter into a greased bread/loaf pan. Bake at 350* oven for 55-60 minutes or until toothpick inserted near the center comes out clean. Cool.

You can fatten this recipe up by adding butter to a warm slice or even making it a dessert by adding a cream cheese frosting. I personally prefer it just the way it is right out of the oven. This way you can choose the guilt or go without with this delicious low fat blueberry banana bread.
